You can expect to pay around $265 per person to eat here, so visiting La Vague d’Or is a bit of a commitment, but we weren’t disappointed — and we don’t think you will be, either. And let's be honest, when you're waltzing around the luxury hotel of Cheval Blanc St-Tropez, jewel of the Riviera, you're not exactly hunting for a bargain.

You’re looking for that "Ooh la la!" moment, and here it’s served on a plate, accented with the finest Provence flavors.  

A Golden Atmosphere

Alright, so you've sashayed into the temple of gastronomic marvels. Now, let's talk vibes! To say the atmosphere at La Vague d'Or is intoxicating would be a disservice. It's more like stepping into a dream directed by Wes Anderson, set in the Provencal countryside, but with a dash of Mediterranean pizzazz.

The restaurant is surrounded by an oasis-like green area filled with aromatic pine trees. There’s always a refreshing breeze blowing in from the nearby sea, making those pine trees smell so incredibly good.

Right now, La Vague d’Or has two separate menus. The first is called Run Away Together, and no, we’re not proposing — although after these dishes, you might be tempted to put a ring on it.

Run Away Together is a group of unique and free-flowing meal options that are fully customizable. For 360 Euros (just about $400), you get three once-in-a-lifetime savory dishes and one sweet. For 20 extra Euros, you can add local cheese to the meal. This menu changes seasonally, so it’s always a surprise what you’ll get.

Now, if that didn't tickle your fancy, allow us to introduce you to the Epicurean Adventure. Epicurean Adventure is another unique combination of customizable savory dishes served with one sweet to top it off. Think of it as Run Away Together’s sultry, sophisticated sister.

You’ll get a gastronomic tour of Arnaud’s imagination with customizable savory plates, climaxing with a dessert that could well be the foodie equivalent of fireworks. It's the Katy Perry song of fine dining experiences: unforgettable and a little extra, in the best way possible.

Courses at La Vague d’Or are served with the finest single-origin coffees and tisanes (fruit-based teas), along with insanely delicious local wines you definitely won’t want to miss.  You’re in France, after all, and there’s no better excuse to have a few glasses of impeccable vino from the impressive wine list over dinner.

The Man Behind the Magic

Let's dish about the maestro of the kitchen, Arnaud Donckele. Born in Rouen and raised in Mantes-la-Jolie, this French culinary genius has food practically running in his veins.

His parents, Philippe and Véronique, were charcutiers-traiteurs; you bet those artisanal roots shaped him. The countryside also played its part; his grandparents were Normandic farmers. Can we talk about authentic, farm-to-table realness?

His father was all about cooking and hunting, diving deep into gastronomic literature like he was on a culinary treasure hunt. Young Arnaud was basically marinating in passion for the craft from his earliest days.

At 16, he flew the coop and landed in Paris, his dreams crammed into a BEP in cooking despite parental reservations. He trained at the esteemed École Ferrandi and under Georges Landriot at Goumard Prunier. After an internship at Les Prés d'Eugénie under Michel Guérard, he ditched school to live his own epicurean adventure.

Donckele's career has been a tour-de-force, clocking in stints under legends like Alain Ducasse and winning culinary awards like he's collecting Pokémon cards. Gault et Millau gave him four toques, and don't even get us started on his Michelin journey. Two stars in 2010, and by 2013, the man was flaunting three Michelin stars for La Vague d'Or.

By 27, he was running La Vague d'Or, all while balancing a fabulous family life. Two kids, a loving wife named Marie, and a lifetime of accolades? Could he be any more perfect?
